Ingredients

Instructions
  1. Heat the oven to 200c
  2. Mix the spices together to make a Piri Piri mix for the chicken, Marinate the chicken with the mix and place on a baking tray and set aside.
  3. Parboil the potato wedges for 5 mins in a pan of boiling water, drain set aside and let them dry.
  4. Bring a pan water to the boil and cook the pasta as per the packet instructions
  5. Toss the potatoes with some oil and the jerk seasoning mix, spread on the baking tray with the chicken. Bake in the oven for around 20-25 minutes.
  6. Melt butter in a medium skillet pan on a medium heat. Add flour and stir to make a roux
  7. Slowly add the milk, stirring consistently until nice and creamy. Add mustard powder and saffron.
  8. Add the cheese a little at a time to the pan and keep stirring until all the cheese has melted.
  9. Place the skillet pan in the oven and bake until the cheese is bubbling and turning slightly golden.
  10. Once cooked, place chicken on a plate with the wedges and the mac n cheese on the side.
