  1. To make the batter, tip 140g plain flour into a bowl and beat in four eggs until smooth. Gradually add 200ml milk and carry on beating until the mix is completely lump-free. Season with salt and pepper.
  2. Heat oil in a 9×11 casserole at 230C until smoking hot Pour in batter and bake until puffy and golden (approx. 30 minutes).
  3. Top with your favourite toppings and bake until cheese is melted.
