Sicilian Lemon Chicken

Ingredients
For the Chicken
- 2 chicken breast fillets
- 1/2 tsp Dried rosemary
- 1/2 tsp dried oregano
- 1/2 tsp Dried parsley
- 1/2 tsp Dried Thyme
- 1/2 tsp onion granuals
- 1 tsp Lemon zest
- 1/2 tsp Ground black pepper
- 1/2 tsp garlic powder
- 1/2 tsp Chilli powder
- Pinch of Salt
For the Mash
- 2 large white potatoes peeled and cut into chunks
- 1 small red onion finely sliced
- 1/2 tsp dried oregano
- 1/2 tsp Garlic granules
- 1/2 tsp Cracked white pepper
- 1/2 tsp ground cumin
- 1/2 tsp Ground white pepper
- For the Mediterranean Drizzle
- 1/2 tsp Onion Powder
- 1/2 tsp garlic powder
- 1/2 tsp Ground paprika
- 1/2 tsp ground coriander
- 1/2 tsp Black pepper
- 1/2 tsp ground cumin
- 1/2 tsp Smoked sea salt
- 1/2 tsp Dried parsley
- 1/2 tsp Dried basil
- 1/2 tsp smoked paprika
- 1/2 tsp chilli flakes
- 2 tbsp olive oil
- 1 baby gem lettuce quartered lengthways (keep root intact)

Instructions
- Heat the oven to 200C/fan 180C/gas 6.
- Mix all the herbs, spices and lemon zest on both sides of the chicken breasts then cook on a tray in the oven for 20 mins.
- Boil the potatoes in a pan of salted water until tender, then drain.
- Mix the Mediterranean herbs and spices in a small pot with 2 tbsps olive oil and set aside.
- Heat a little oil in a frying pan and fry the onion for 6-8 mins over medium heat until golden.
- Turn the heat down and add all the herbs and spices for the mash mix. Gently fry for 2 mins, then tip out the onions into a small bowl. Wipe the frying pan to use again in a minute.
- Mash the potatoes with some butter, then mix in the spiced onions.
- Heat a little oil in the frying pan over medium heat and cook the lettuce quarters for 2 mins on each of the flat, cut sides. Flip them over to cook their outer sides for 1 min until charred.
- Serve the chicken with spiced mash and charred baby gem lettuce. Pour the Mediterranean drizzle over everything, and serve.
