Piri Piri Chicken with Saffron Mac n Cheese & Spicy Wedges

Ingredients
FOR THE CHICKEN
- 2 chicken breasts
- 1 1/2 tsp paprika
- 1 tsp Oregano
- 1 tsp Ginger powder
- 1 tsp cardamom ground
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp cayenne pepper
FOR THE SPICY WEDGES
- 2 large potatoes cut into wedges
- 1 tbsp jerk seasoning
FOR THE MAC & CHEESE
- 150 g macaroni pasta
- 1/2 tsp Saffron
- 1/2 tsp mustard powder
- 250 ml Milk
- 2 tbsp flour
- 1 tbsp butter
- 200 g Cheddar Cheese grated
- 50 g Parmesan cheese grated

Instructions
- Heat the oven to 200c
- Mix the spices together to make a Piri Piri mix for the chicken, Marinate the chicken with the mix and place on a baking tray and set aside.
- Parboil the potato wedges for 5 mins in a pan of boiling water, drain set aside and let them dry.
- Bring a pan water to the boil and cook the pasta as per the packet instructions
- Toss the potatoes with some oil and the jerk seasoning mix, spread on the baking tray with the chicken. Bake in the oven for around 20-25 minutes.
- Melt butter in a medium skillet pan on a medium heat. Add flour and stir to make a roux
- Slowly add the milk, stirring consistently until nice and creamy. Add mustard powder and saffron.
- Add the cheese a little at a time to the pan and keep stirring until all the cheese has melted.
- Place the skillet pan in the oven and bake until the cheese is bubbling and turning slightly golden.
- Once cooked, place chicken on a plate with the wedges and the mac n cheese on the side.
