Blistering Hot Chilli Chicken Wings

Ingredients
Sauce
- 6 Dorset Naga Chillies
- 1 small red bell pepper diced
- 1 400 g tin tomatoe puree
- 1/2 medium onion diced
- 2 cloves garlicgrated
- 2 cm ginger grated
- 2 tablespoons cider vinegar
- 1 tablespoon sugar
- 1 tsp salt
- 1 pin sized Psycho Serum 6.4 million SHU chilli extract paste
Chicken Wings
- 750 g Chicken wings
- 2 tbsp baking powder
- 1/2 tbsp salt
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp Oregano
- 1/2 tsp Onion Powder

Instructions
Sauce
- Remove stems and seeds from naga chillies.
- Combine all ingredients in a medium saucepan and add enough water to cover. Bring to a boil, then reduce heat to low and simmer for 20 minutes until vegetable are soft.
- Place in a blender and blend until smooth.
- Store in a glass jar or plastic container until ready to use.
Chicken Wings
- Preheat the oven to 120c. Line a baking tray with foil and spray a wire rack with cooking spray. Lay out the chicken thighs on the wire rack skin side up and place inside the baking sheet. Dry the chicken thoroughly with paper towels.
- Place the chicken in a bag or a bowl with a lid and toss the chicken in the baking powder and spices and then put the chicken back on the rack.
- Bake the chicken in the center of the oven for 30 minutes. Increase the heat of the oven to 200c and move the oven rack up one spot then bake for an additional 25-30 minutes or until brown and crispy
- Add the pre-made chilli sauce to a deep pan and add in the chicken wings until nicely coated.
